The Most Delicious (And Easy) Slow Cooker Beef Roast

In a previous post, I gave you a super easy way to cook a perfect beef roast every time.

While this recipe is similar, the additional ingredients give the roast a rich and complex flavor. Cooking low and slow will still produce a tender and flavorful roast.

My house is chaos all the time. Between full-time jobs, two kids, two dogs, and a house to try to keep somewhat clean, I barely have any time to prep food. I love to cook complicated and time-consuming recipes, but most of the time, I'm just scrambling to make sure dinner is on the table.

This is the perfect recipe for that. When I wake up, I toss the ingredients in the slow cooker, turn it on low, and reap the benefits of what tastes like a complicated recipe at dinner time.

Throw together some sides and gravy, and this has become a staple in our house.

 

Making the Roast

If you are a planner and have the time, you can certainly thaw your roast and sear it on all sides in some butter.

But, if you're anything like me, you're living your life in a whirlwind of chaos. I personally think a frozen roast works best, so I just toss the roast in with one thinly sliced onion, two cups of bone broth, three cups dry red wine, one tablespoon of Worcestershire sauce, and a bay leaf.

Turn it on the lowest setting and let it cook for 10-12 hours. Voila!

I find it is best complemented by some fluffy mashed potatoes and roasted asparagus.

Ingredients

  • 1 grassfed beef roast (chuck, sirloin, or rump)

  • 1 medium onion thinly sliced

  • 2 cups grassfed beef bone broth

  • 3 cups dry red wine

  • 1 tbsp worcestershire sauce

  • 1 bay leaf

Instructions

  • Salt all sides of your roast

  • Place frozen roast in slow cooker and combine all ingredients along with it.

  • Turn on slow cooker to the lowest setting and cook for 10-12 hours under beef is fork tender.
